Entry requirements

This course is aimed at students with industry experience who would like to further develop their skills. Learners are expected to be enthusiastic, highly motivated and to be able to work on their own initiative.

What does the course involve?

The course runs for 1 day on timetable. Learners will complete a portfolio of work covering a wide range of cooking techniques with underpinning knowledge and will be expected to complete them in 'independent study time'. The portfolio will be completed to deadlines and cover a range of topics linked to catering and hospitality. Learners may be expected to work in our Production Kitchen to further develop their skills and be able to reflect industry standards.
Learners will attend 'skills sessions' where they learn advanced kitchen skills. Practical assessments will be completed as part of the course to assess your skills and knowledge gained during the year. Practical sessions are held with an emphasis on delivering food to the highest of industry standards.

How is the course assessed?

You will compile a Portfolio covering the range of units with underpinning knowledge question papers to show an understanding of subject matter.

Additional notes

You will gain an excellent folder of work which will include a range of recipes and methods which can become your own personal cookery book.
